I've been trying out a lot of different baking this year and these are one of my favourites!

These cookies are so soft, delicious, and, most importantly, EASY to make. I am a mother of 3 young kids, so easy is something we LOVE. It helps us enjoy the process of baking together, and creating something delicious. I don't know about you, but in our house, while baking something is meant to be fun, sometimes it can turn into a stressful situation with kids 4 and under.

I have a BIG love for the cake based cookies, as I find them quite filling even after one. They produce large, robust cookies, making for a beautiful display for dessert tables. But more importantly, they maintain their soft chewy texture, keeping them from drying out and lasting a long time! Perfect for anyone who wants to prep their treats for a birthday or holiday in advance! For this recipe I used Betty Crocker's White Cake Mix.

When preparing the ingredients, I prefer to use the Kitchenaid Stand Mixer as it works best for blending the ingredients for me personally. If you do not have one, you can certainly mix in large bowl with your preference of tool - Spoon, wisk, spatula, hand, etc.

These are simple, fun, and delicious! We hope you enjoy them as much as my family and I do!

Ingredients:

1 box of White Cake mix

1/3 cup Canola Oil

2 Eggs

15 Crushed Oreos

1/2 cup White Chocolate Chips

Instructions:

1- Preheat oven to 350 degrees. Line a large baking sheet with a silicone baking mat (or parchment paper)

2- In a large bowl, combine white cake mix, eggs and oil together until smooth

3- In a separate bowl crush 15 Oreos. Once crushed, mix this in with your cookie batter by folding them in until combined. Pour in white chocolate chips and fold in once again until combined

4- Roll approx 2 tbsp portions of batter into balls and place on baking sheet.

5- Bake for approx 12 minutes (depending on your oven). Once they begin to turn golden on top/sides, remove from oven and let stand on baking sheet for 5 minutes. Then place on wire rack to finish cooling

6- Eat and ENJOY!

Note: This recipe rendered about 15 cookies for me. Hard to tell for sure...my husband snuck a couple and MAYBE some cookie dough was eaten during the preparation process...lol!
